Malgré sa violence musicale, Cannibal Corpse États-Uni, n'est pas un groupe de Grindcore. En effet, ses textes ne sont pas engagés politiquement : ils sont dans la pure tradition du death metal, avec une tendance au sanglant et à l'horrifique des séries Z. Les pochettes de leurs albums, macabres à souhait, concordent bien avec ce style.
Le premier chanteur Chris Barnes (aujourd'hui membre du groupe Six Feet Under) et Corpsegrinder, son successeur, sont souvent les sujets de polémiques. Les avis des fans divergent quand il s'agit de départager George "Corpsegrinder" Fisher et Chris Barnes, certains préférant la voix gutturale de George Fischer et reniant Chris Barnes suite à son départ pour créer Six Feet Under.
A la sortie de l'album Tomb Of The Mutilated, c'est l'explosion du groupe sur la scène internationale. Notamment grâce au titre Hammer Smashed Face, qui est le dernier joué en live par le groupe, et aussi parce que Jim Carrey - amateur de musique extrême - leur propose une apparition dans son film Ace Ventura.
